Protein Pancakes
Fat: XXg | Protein: XXg | Carbs: XXg | Servings: 1


1 scoop protein powder (try strawberry Designer Protein)
2-3 egg whites
1/4 cup Nonfat cottage cheese
3 ounces Extra firm low fat tofu
1/2 cup Old Fashioned oatmeal
Optional:
1 table spoon Smart Beat butter
1/4 cup Sugar free syrup

Instructions:
1. Blend ingredients together in a blender or food processor.
2. Add vanilla or almond extract, cinnamon and nutmeg.
3. Cook batter like pancakes flipping when the cake bubbles in pan (use nonstick cooking spray).
4. Add Smart Beat or eat plain.

Mexican Egg Wrap
Fat: 11g | Protein: 28g | Carbs: 28g | Taste: 10+

1 whole egg and 4 whites
diced onion, green pepper
jarred jalapeno peppers (optional)
1 slice soy cheddar cheese
dash of cayenne pepper
dash of black pepper
1 7-8" whole wheat tortilla
1 tbsp. olive oil or MCT oil (or use PAM spray)
Cholula hot sauce or green Tabasco (optional)

Instructions:
1. In a saute pan, fry onions, peppers and jalapenos until soft.
2. Fry beaten eggs in pan like an omelette.
3. When it is almost done, add cheese.
4. Flip omelette and when done, place onto tortilla.
5. Roll like a burrito, cut in half and top with hot sauce.

Flax Oatmeal Cakes
Fat: 15g | Protein: 12g | Carbs: 18.5g | Servings: 1

1/2 cup oat flour (grind oats in coffee grinder)
2 Tbsp. flax seed, ground
1 t. alum-free baking powder
1/2 tsp. salt
1/2 tsp. powdered stevia or Equal
1 tsp. oil
1 egg (if you're not avoiding eggs, otherwise it works fine without)


Instructions:
1. Slowly add just enough water to make pancake consistency and fry like pancakes. Makes 4-5 small hearty cakes.
2. If you want to get fancy, add walnuts, cinnamon, carob chips... whatever.
3. Use your imagination.

topping (optional):
1 T. almond butter
1 T. flax oil
1/2 t. powdered stevia

1. Mix until smooth and spread on top of pancakes. (otherwise works great with just plain yogurt for dipping...)
